One of Austin’s most buzzed-about mobile culinary experiences is settling down—sort of. Austin Oyster Co., the city’s go-to raw bar catering outfit known for fresh East Coast oysters and roving shuckers, is transforming an existing building at 2502 E. Cesar Chavez into its first-ever brick-and-mortar outpost.
According to state construction filings, work begins June 15, 2025, on the $800,000 privately funded project, with completion expected by December 15, 2025. The renovation includes a 2,016-square-foot indoor buildout and an additional 993-square-foot outdoor deck, creating a 3,009-square-foot venue designed for oyster lovers to gather.
While the company has built a loyal following with private events, corporate parties, and weddings—serving up to 1,000 oysters at a time—this permanent location will expand their presence with on-site service. Outdoor space, raw bar seating, and their signature mignonette may soon be a mainstay in the East Austin food scene.
Notably, all exterior elements, such as the facade, drive-thru, patio, and landscaping, are under a separate permit handled by the landlord, per the TABS listing.
